Peggy Straw’s Special K Cookies



Oh, Peggy, Peggy, Peggy!  I wish we could have met! How Special K has not inked a deal to have these on its box, is beyond comprehension. This recipe was passed down to me by my mother-in-law who made these for Daniel and his brothers and sisters growing up. I remember Daniel talking about them once. The idea of cereal cookies didn’t excite me much then… until I tried them! These cookies are ridiculous. Super crisp and buttery and not unlike something you might find at Momofuku Milk Bar. My favorite cookie hands down. When she sent me the recipe I had to read it three times. There is no egg in this recipe. I repeat: there is no egg  in this recipe. This completely changed everything for me in terms of cookie baking. I never even realized you could do that! Now I look forward to baking all my cookies without egg and with very little flour.


2 sticks butter
1 cup sugar
1 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
1 tsp cream of tartar
1 cup chocolate chips
1/2 cup finely chopped nuts
2 1/2 cups special K cereal


Preheat oven to 350. Beat first three ingredients until fluffy. Add the next three ingredients and continue to mix until incorporated. Add in chocolate chips and nuts mix just until incorporated. Then using a wooden spoon mix in the cereal. Add spoonfuls to a parchment-lined cookie sheet. Bake for 10 minutes flat. Remove and let cool on a baking rack, then find a good place to hide them from your family, this recipe only makes two dozen:)
