Story

It’s hard to mess up this salad. The key is to not mess too much with this salad. If you start with delicious burrata and summer heirloom tomatoes all you need is basil, salt, pepper and a little olive oil.

Ingredients

serves 6
3-4 heirloom tomatoes
2 packages of burrata (which is cream injected mozzarella. Plain old fresh mozzarella works too)
basil leaves and flowers
good olive oil
Maldon salt
fresh cracked pepper

Story

This was the last of the potatoes we grew from the garden. Usually, I’ll cook these with a bunch of smashed garlic but this time since we had so much garlic in the main course, I kept it even more simple with plenty of rosemary, olive oil, salt, and pepper.

Story

When we were about 6 months pregnant with Heart, Daniel and I traveled to Vienna. Unfortunately I was plagued with major “morning sickness” throughout my pregnancy which had (fortunately) let up about the time we left for Europe, but I still couldn’t stomach most Viennese foods. Although, schnitzel, schnitzel, I could deal with. So, I basically ordered it everywhere we ate. And believe me, that is actually a possibility in Vienna. Every restaurant serves it. My version uses thinly pounded out berkshire butterflied pork chops and a fresh, lemony salad with a hint of honey mustard on top to cut the richness. I slice it crosswise for the girls and tell them its chicken strips. They gobbled it up….as we all did.

Ingredients

Serves 4
pork cutlets
2 butterflied boneless berkshire pork chops (doesn’t have to be berkshire, heck it doesn’t even have to be pork…veal or chicken breast would also work)
1 cup panko bread crumbs
2 tsp salt
fresh ground pepper
2 eggs beaten
1/8 cup milk
grape seed oil for frying
lemon wedges for serving

salad

hearty “power green”salad mix (I like baby kale, spinach, chard mixes)
1 tspn dijon mustard
1 tspn honey
1/3 olive oil
1/2 tsp salt
1/2 tsp pepper
juice of one lemon
1/8 cup white wine vinegar
1/3 cup olive oil
1/4 cup of toasted slivered almonds

Story

My kids are obsessed with soup and frankly so am I. This version of split pea calls for plenty of smoky bacon and suggests that the peas still resemble, well, peas.

Ingredients

2 tbsp grape seed oil
1 yellow large onion sm. dice
1/4 lb smoky bacon diced
3 carrots sm. dice
3 celery stalks sm. dice
2 garlic cloves minced
1 bay leaf
1 lb green split peas
4 cups low sodium chicken broth
2 cups water
2 1/2 tsp salt
fresh ground pepper
4 tbsp butter
juice of half of a lemon
butter/croutons/baguette for serving

Story

Getting inspired and very, very excited about our impending trip to Japan… so I whipped up with this tasty grilled bread/salad/egg dish for Daniel and I that makes excellent use of these yummy Momuofuku soy sauce eggs I found on Food 52. This dish would make a great breakfast, lunch, or dinner. It is like eggs + toast,  a salad, and an open-faced sandwich all rolled into one.

Ingredients

Serves 2
soy sauce eggs (this is enough liquid for 6 which can be saved and reused)
6 tbsp water
2 tbsp sugar
3/4 cup soy sauce
2 tbsp sherry vinegar
eggs (one per person)

arugula salad
2 cups of washed and dried baby arugula
1 scant tbsp olive oil + 2 dashes sesame oil
1.5 tsp rice wine vinegar
sea salt + pepper

toast assembly
2 slices of rustic white bread (or whatever sounds good, something with sesame would be particularly nice)
2 tbsp softened butter mixed with one tbsp prepared wasabi (from tube)
1/2 avocado
2 soy sauce eggs
black sesame seeds for finishing
