Almond Sugar Cake (aka Baby Cake)



My friend Tony turned me on to this recipe. Between the four of us we ate the whole cake. The amazing thing is, everyone who I have made this cake for…loves it. I most recently made it for our friends Max & Pam. They just had a beautiful baby girl, Maddi who is nearly the same age as Heron. It’s the only cake easy enough to make with a 7 week old by your side, hence the name.



1 cup almonds

1 cup organic or natural sugar

½ tsp almond extract

½ tsp salt

½ tsp baking powder

1/3 cup flour

1 stick butter

1 tbsp Cointreau

3 eggs


Use a food processor to process the almonds until they are ground. It won’t be quite a meal texture, there  will be some texture. Add butter, sugar, eggs, extract, Cointreau. Mix. Add flour, baking powder, and salt and mix again. Pour into a parchment lined cake pan (butter the sides). Cook at 350° for 30-33 minutes. Don’t over bake!  Insert a toothpick in the center; if it comes out clean, it’s done. Cool it in the pan on a baking rack. Flip it out on a plate; remove parchment and dust with powdered sugar. Serve with seasonal berries mixed with a touch of sugar and vanilla ice cream. (Or just serve it plain, its really moist enough that it doesn’t need a thing!)
